The Cowboy Club is a casual, family-oriented, dining area with full bar. The décor is Country and Western, showcasing the second largest set of Longhorn horns in the United States as well as original wood walls and a number of prominent Cowboy Artists' works. The kitchen produces the finest in Angus and Buffalo Steaks, Game, Fresh Seafood as well as signature dishes such as Cactus Fries and Rattlesnake.

The Silver Saddle Room is a romantic, yet rustic dining room adjacent to the Grille with patio side service when weather permits. The menu features the same items and prices, with the addition of, amuses and sorbet intermezzos.

The Redstone Cabin is the most intimate of our dining facilities. It offers an elegant dining experience in a historic cabin atmosphere. The Territorial House boasts a river-rock fireplace and an outdoor patio with a fire pit and waterfall. The Redstone Cabin also offers specialty dinners, private parties, banquets and weddings.
